Article Round-up: Labor Day Edition

Hello Frugal Confessions Readers! I hope you all are enjoying your Labor Day weekend.
The Bush tax Cuts in 2001 and 2003 are set to expire, and WealthInformatics discusses what this could mean for you and I. My Dollar Plan discusses specifically what this could mean for married taxpayers filing jointly. Right now Paul and I stand to gain from a marriage tax benefit because he makes a chunk more than I do, but we could stand to lose as early as next year under the same circumstances.
Also, is anyone else out there living with lunchbox fatigue? I am…if I eat another turkey and cheese sandwich I might just throw it out instead of eating it. The Saved Quarter posted about several frugal and varied options for her kindergartner’s lunches. In fact…what do you put in your lunch bag? I would LOVE to hear some ideas. Here are typical things I include: turkey and cheese half sandwich, yogurt, banana, strawberries, occasionally carrot sticks and ranch dressing, sunchips, string cheese sometimes, apples and peanut butter, almonds or praline pecans (my favorite!)…

I hear ya! Sometimes I’ll purposely make too much pasta/beans & rice/soup for dinner so that I can take it to work the next day (or couple days) and reheat it for lunch. Or Trader Joes sells these great frozen burritos that are a quick & easy lunch to microwave. I almost always have some fresh fruit and veggies..I really like baby carrots and lately we’ve had lots of summer fresh watermelon and cantaloupe, mmmm. And since I’m a salty snack lover, I tend to keep crackers at my desk to snack on throughout the day.

When I get the lunch blues, I call up my friend and we figure out who has what in the fridge. Usually one of us has something main-dish like and the other has some salad stuff. Our offices are just a few blocks from one another, so it works out pretty well. The other thing I do is keep a few instant meals (that I get on sale of course!) stashed in my desk. Like the little pasta steamers, soups, etc. That way when I’m on the verge of a deli meat sandwich breakdown, i can walk out the door knowing I have something different waiting for me in the office! Both ideas rescue me from eating out for lunch. I guess this comment is not so much about what I pack, but what I do when I’m sick of packing!

I usually pack fresh fruit, granola bars, or yogurt for breakfast and snacks. Lunch is usually leftovers, a Hot Pocket, a burrito, or a multitude of sandwiches (PB&J, Bologna, Ham, Beef, etc).
